Bananna Bread Recipe PLEASE!

Just seen Enid is having home-made banana bread tonight - I have 2 bunches of bananas that are almost over-ripe and want to use them up quick.

Anyone got a quick easy recipe for me?!

Quick Banana Cake: (not bread, will it do?)

5oz SR Flour, 0.25 tsp bicarb soda, 1 ripe banana, 2oz soft marg, 1 egg, 5oz sugar, 0.5 tsp vanilla essence, 0.25 tsp salt.

Place egg, banana, sugar, butter, vanilla & salt in liquidiser, blend till smooth.

Sift flour + bicarb into bowl. Pour liquidised mixture in.

Mix all together well.

Pour into greased loaf tin, gas reg 4, approx 40 mins.

Improves with standing. Top with lemon icing.

I also have a more complicated recipe for making in s/wich tins.

This is the Fairtrade recipe and is yummy !!

Ingredients
225g/8oz self-raising flour
100g/4oz butter
150g/5oz caster sugar
450g/1lb Fairtrade bananas (the softer the better), peeled and mashed
½ tsp salt
2 eggs
175g/6oz mixed dried fruit

Method

  1. Pre-heat the oven to 180C/350F/Gas 4.
  2. Mix all the ingredients except the dried fruit together. You can do this in a food processor or by hand in a basin.
  3. When they're all thoroughly mixed, add the dried fruit. Spoon the mixture into a 1kg/2lb non-stick loaf tin, spread it out evenly and bake it for one and a half hours. The loaf is done when a skewer pushed into its middle comes out clean.
  4. Cool on a wire rack, then slice before serving.

Yeahina.. I remember making a fab banana bran loaf in school(centuries ago) but could never remember it. Will try your recipe this week yum yum!
