Can you use less than ripe cookers for chutney etc. Have been given a load but some may not be fully ripened yet. If so are they better used alone or mixed with other fruit/veg. tia

I don't know for sure, but I would have thought so - preserves generally work better with under-ripe fruit rather than over-ripe and the only reason not to eat under-ripe apples that I know of is that they can give you indigestion if you eat too many. Chutney isn't something you'd be eating large quantites of anyway and you can add extra sugar if they are too tart.

I make a lovely apple and apricot chutney, if I do say so myself (mostly apple, just a few dried apricots at the end)
