I have grown a glut of courgettes and have no idea what to do with them!

Any suggestions please?

I tried the Nigella Lawson courgette fritters a while back and they were gorgeous (did make a right mess of my kitchen though Blush) they have feta cheese and spring onion.

Ratatouille

In a pasta sauce (perhaps with tomatoes, garlic, lots of basil, maybe black olives)

Chopped and sauteed with lardon and shallots, as a side dish

This is very wintry but -- chop courgette and mushrooms together and saute, add a creamy blue cheese and a bit of cream, serve over mashed potatoes

Sliced in rings and baked with bread crumbs and parmesan

Lots of French and Italian dishes basically -- we used to live in France and ate a lot of courgette!

My MIL did a lovely courgette/potato mash, served with fish

Oh and sauteed courgette and aubergine are really nice in a tabbouleh or couscous, that's a bit more summery perhaps!

Slice them, mix with crushed garlic and bake in the oven until tender.

Put on some pasta.

Put some olive oil in a frying pan over medium heat, add a smashed garlic clove and some dried chilli flakes and let it flavour the oil.

In the meantime, grate courgette including skin, one per person.

Take the garlic clove out of the pan, turn heat up a bit, add the courgette and saute until it's just starting to catch and turn golden.

Drain pasta, leave a bit of the cooking water in the mix, put back onto the saucepan under a simmering flame, add the courgette, grate in some parmesan and stir everything together.

Add some toasted pine nuts, lemon juice and zest if you have them on hand.

Classic ratatouille, I make it in batches and freeze it. Perfect on jacket potatoes or with cous cous when you want a cheap easy meal.

I just shove the chopped courgettes into a big pan with chopped onion, chopped fresh tomatoes, garlic, some herbs and the secret ingredient Sainsburys tomatoes and vegetable paste. Cover, allow to simmer, stir occasionally and then it's done! Season and serve or freeze. Couldn't be easier!

I've always wanted to chargrill them in strips and put in jars filled with garlic flavoured olive oil and keep for Christmas (gifts or for the buffets) but haven't done it yet!

or just roasted in a roasting tray with a sprinkle of curry powder.

Sauté with chopped (not too fine) red onion with some cumin. Add to a bowl of couscous you've been doing in a bowl with clingfilm over it - stir in the veg, squeeze in some lemon and cover for another 2 mins. Great side dish, especially with fish.

There's one in the recipes section on here - grated courgette slow cooked with bacon, garlic and creme fraiche mixed into pasta. Really good, even the vegetable-hating kids loved it!!

Grated courgette in chocolate and courgette cake. Makes the cake lovely and moist, but doesn't change the chocolate taste Wink

Also, courgette and carrot muffins (a Hummingbird Bakery recipe, sorry but can't link on my phone).

Ooh, what a fantastic thread, I love courgettes. Recently I've been making courgette soup, just courgette and chicken stock with croutons on top.

I also have it raw in a salad. If you use a potato peeler to get fine slithers you can just add it to a normal salad. I like to do a salad with courgette, lettuce leaves, peas, feta cheese and a dressing made with olive oil, lemon and mint.

If I'm in a hurry I lightly fry courgettes and add to pasta with either jarred pesto or a tomato sauce.

chopped courgette sticks dipped in a beaten egg then roasted with breadcrumb, lemonzest and pepper.

I get Abel & Cole and they had a recipe for courgette marmalade.

Or my DM adds them to chocolate loaf cakes and they give a lovely nutty flavour.

I make courgette bread - the dcs love it. You can do a search on line for it, but search for zucchini bread, as most of the recipes I've seen are American, and they call courgettes "zucchini"

Deep fry them with batter made of soda water and seasoned flour, very yum. Or make a lasagne using slices of courgette instead of pasta, very yum too.

I've just ordered a spiralizer thingy and am looking forward to trying courgette "spagetti".

I wish I had some homegrown courgettes and the flowers too. Yum!
