banana muffins?

I have a glut of bananas, and they are starting to blacken. How can I be Economical and use them in a delicious muffin? I don't know where to start!

I regularly make this on Fridays at the nursery to use up over-ripe bananas.

I have sr and plain flour, margerine, a bit of sugar bit not much, lemon juice, 3 eggs, oats, veg oil... and squillions of bananas.

OK.

  1. Weigh the eggs in their shells

  2. Weigh out an equal amount of SR flour, Margerine and half the amount of sugar (the bananas will be V.sweet)

  3. Cream the marge and sugar together (do this on a food-processor, if you have one)

  4. Beat the eggs in a jug/bowl and gradually add them to the creamed marge/sugar

  5. Sift in the flour

  6. Mash the bananas in a bowl (I think you'll be able to use about 4) with a glug of milk and then add this to the mixture.

  7. Stir it all together, you're looking for a fairly loose 'dropping' consistency.

  8. Bung it in a tin (line with greaseproof paper, if you've got any, to make it easier to clean the tin) and into a pre-heated 160 oven (not sure what that is as gas). Cover with foil if the top begins to brown too quickly. I usually give this about 45 mins. Depending on the size of the tin. It's cooked when a knife comes out clean etc.
