FISHCAKE RECIPIE PLEASE!

Hi,

decided DS needs more fresh fish in his diet, ive bought some fresh cod fillets and think fishcakes would be best - subtle to start with to wean him to the taste,

any simple recipies?

hes 20 months old,

Ooh, my special, you know the red tin of pilchards? Glenryck i think, mix them in with some mashed potato and ketchup (if you want to). Coat with flour (and or bread crumbs and shallow fry, They are so yummy! and bursting with omega three!

Cod cakes: (not my own recipe)
Can be done with haddock or salmon too, or a mix of all three.

makes 10-15 little cakes

350g potatoes (cubed)
450g cod
250ml milk
a handful of flat-leaf parsely
ground black pepper
knob of unsalted butter
plain flour for coating
oil for frying

  1. cook potoatoes for 10 min until tender
  2. put fish in pan, cover with milk, cook gently for about 8-10min. (until fish turns opaque, or can be pulled into big flakes). Lift the fish out and reserve milk. Flake fish into a bowl while checking for bones. Add the parsley and pepper.
  3. drain potatoes return to pan and heat for a few minutes to get rid of exess water. Then mash with butter and a little of the fish milk.
  4. Mix mash with fish and shape into small round balls, pat them in the flour and chill in the fridge for half an hour.
  5. heat the oil and cook the fish cakes on each side for about 2 minutes until gloden brown. Drain on kitchen towel and serve.

You can make a fruity salsa to go with , use mango, a plum tomatoe, and a piece of cucumber peeled and finely chopped.

finely chop 4-5 spring onions and 2 sticks of celery.

450g cod/haddock - bake in oven (200C for about 15 mins). Cool, carefully flake into bowl.

Finely grated medium carrot - squeeze out juice (or cakes go all soggy)

1 beaten egg

handful of breadcrumbs

tiniest squirt of hot pepper sauce

black pepper

Shape into approx 8 cakes (or whatever size you want)

Chill in fridge for 30 mins or so.

Fry for 5 mins each side.

Serve with sweet potato wedges and a salsa dip/tommy sauce.
