Muffins

Just wondered if anyone had some "healthy" muffin recipes.

DS is starting school next week, there is no lunchbox police but I don't want to give him crisps or a biscuit for his playpiece every day, and i have a feeling fruit might up not getting eaten.

Are there any tried and tested muffin recipes that also freeze well? I'll be at college when he's at school, so would be nice to be able to make a batch at the weekend and just take them out the night before they are needed.

Or any other ideas?

Try googling the 'my lovely little lunchbox' blog, I've made the courgette, corn and cheese ones and they are adaptable for different kinds of veg etc. It has some lovely recipes, not all super healthy but fairly child friendly as it's all about baby led weaning.

I made these yesterday and they came out really well. I added a handful of sultanas and some pumpkin seeds to the batter. You might want to reduce the cinnamon for small child's tastes. I reckon the courgette could be replaced easily by grated apple but I've not tried that yet.
