Can anyone share their favourite, quick rice dish with me please
I make risotto but normal rice I only use with a curry and would like some tried recipes

We do a few as DH loves rice. We have a rice maker and make the rice separate. Not sure if that is what you are looking for.

Honey Chicken
Marinade some sliced chicken breast in a small amount of soy sauce and chop some veg to stir fry. Fry the veg in a little oil then add the chicken. Cook until done. Add 1-1.5tbsp honey per person and stir until it melts. Add cornflour paste to thicken.

Sweet and sour chicken
Mix a marinade of equal parts tomato ketchup, soy sauce and rice wine vinegar plus a dash of worcester sauce and balsamic vinegar. Marinade chopped chicken pieces. Stir fry some vegetables then add 100ml pure apple juice. Add chicken and cook until done. If you want it thinner add some chicken stock.

Sweet chilli beef
Thinly slice some frying steak and coat it in egg white (can add salt and 5 spice if desired). Coat in cornfour and fry in a wok with 2 cm sunflower oil. Set aside or put in oven to crispen more. In a saucepan add 1 tbsp rice vinegar with 1 heaped tbsp oyster sauce and 5 tbsp sweet chilli sauce then add half a cup of water. Bring it to the boil then simmer until thickens a little. Serve over the beef.

Gently fry some thick slices of cooking chorizo i(about 5 or 6 slices per person) in a tiny bit of olive oil until starting to go brown and remove from pan. Soften a small chopped red pepper in the remaining chorizo-y oil and cook gently for five or so minutes, adding a crushed clove of garlic for the last minute. Add plain easy cook white rice and stir to coat the grains - I do a generous mug full for 4 people. Then 2 mug fulls of light chicken stock and a little turmeric (or saffron if feeling flush) stir well, return the chorizo to the pan. Towards the end of rice cooking time add a handful of peas, fresh or frozen. When peas are cooked stir through a pack of large cooked prawns and allow to warm through.

Serve with a good squeeze of lemon and black pepper.

Egg fried rice. Super quick and a great way to use up leftover cooked rice. Heat a little oil in a wok or large frying pan. Lightly fork one or two eggs, add to pan and scramble. Remove onto a plate and roughly chop. Add cooked rice and a few chopped spring onions to pan and gently fry for about 5 mins. Tip the egg back into the pan and season with a little soy sauce.
