what to do with blackberries

I always do blackberry and apple crumble but have far too many for that. Looking for inspiration.

And/or how do I freeze them for future use.

make jam? I think they are low in pectin but make a good mix with apple

Spread them out on shallow trays so they are not touching & pop them in the freezer. Then you can put them into bags or boxes & they will all be loose & you can use them as you want.

I do this & then cook them with apples (from frozen) & have for pud with yogurt. Lovely to have in the depths of winter.

Also jam or jelly if you can be bothered!

Am off to pick more this afternoon.

Blackberry vodka - delicious!

Love freezing them for crumbles in the depths of winter too.

Can't believe they are out already - everything is so much earlier this year, I assume because of the mild weather.

Cambridge - they are 3 weeks earlier than last year, from the same field I picked from as well. I keep a gardening diary & usually also put blackberry picking times in it.

I made some jam with mine and it set nicely, no need for lemon- they are pretty sour though.

freeze loads

ice cream
put them (stlll frozen) into muffin mix like you would blueberries
plum cake w blackberries instead
smoothies

but freeze as many as you possibly can and then delight in them in the winter. yum.

I went crazy last year picking and freezing. I'm not sure but I think it was 9 kilos of blackberries in my freezer. Needless to say despite best efforts we did not get through them by making crumbles! In May this year I defrosted and jammed everything left - I think it was 15 jars of blackberry jam Grin It's delicious and also makes great pressies. I think I costed it out at 22p a jar!

we like them instead of rasberries or strawberries with meringue and cream - simple and delicious.

we also chuck them in the porridge :)

I love the look of the blackberry and coconut cake but I'm the only one in this house that will eat coconut...

I think I'm going to try putting some in fluffy pancakes this afternoon. Instead of blueberries.

I've had this at a friends house this morning and it was gorgeous.

She said she adds more blackberries than it says and left out the orange zest because she didn't have any.

I use a really scrummy recipe for blackberry and buttermilk cake from the GBBO everyday recipe book. It's a basic vanilla sponge but with the addition of buttermilk and then after putting it in the tin you sprinkle with blackberries, push them down a but and then sprinkle with brown sugar.
