Spaghetti sauces - making colour

Hi all,

My son refuses to eat fruits and veg and is very difficult with trying new foods. Recenty I booked a big success by making a broccoli pesto sauce which he liked, attracted by two things: we made the spaghetti green (his favourite colour) and he helped in making it. He is enthusiastic for giving spaghetti also other colours. Anybody any tips for a child friendly red sauce, possibly not only tomatoes? And any other colour suggestions? He likes rice too. So that would be another route to add veg. Thanks ladies for any possible suggestions!

Maybe put red peppers in with the tomatoes and some onions (blend it so it's smooth)
Red pesto?

Carrots blended in to tomatoes - sweetens it really nicely. You can also grate carrots/courgettes into meatballs etc.

What about a golden sauce of sweet potato and squash, lightened with some yoghurt/creme fraiche?

Green - add grated courgette or chopped spinach with the pesto, also can make a sauce with puréed peas and mint

Orange - roasted pumpkin and garlic with a bit of cream or mascarpone

Red - sweated diced veggies (always onion celery carrot garlic, sometimes add in red pepper, fennel, anything left over really) add passata, little bit of balsamic vinegar, salt, pepper, herbs (usually thyme, oregano or rosemary) simmer and blend up

Pink - Hugh fearnley whittling stall does a lovely beetroot and walnut hsauce we use with pasta though I think it's meant to be eaten like a hummus. Yummy either way!

Cake and muffins, the only way I can get my day 4 to eat anything I make a chocolate potato, chickpea, courgette cake and he eats it no bother.

Beetroot and banana go well, carrot and sultana cake, squash and cranberry muffins, chickpea blondies, black bean brownies, tomato jam on toast.

Cake and jam. Only think my boy eats.

Day 4 that's spell check for you ds 4. I know it's not pasta but it might be an idea.

We do rainbow rice - little chopped bit of veg so it's all the same size. Peas, sweetcorn, red (any) pepper, spring onions/leeks, mushrooms, carrot (most effort to cut them fairly small...) guess you could do tiny florets of broc & cauli too, but my two detest these with a passion!
Just chuck them all in the rice pot for a couple of mins at the end, job done.
Often serve rainbow rice with fish, or pulled pork/lamb.
