gluten free flour

hi, can I make pancakes (american style) with gluten freen flour or are there tricks?
have the 'plain mix' from waitrose.

Do you mean the thicker type pancakes rather than thinner, crepe style? I make scotch pancakes - small, thicker, fluffy ones - with gf flour and they work out fine. I googled a recipe but it was pretty much the same as the recipe I was already using (for non-gf pancakes).

I usually use
1 egg
1 cup of flour
1 teaspoon baking powder
half a cup milk
tablespoon butter
tablespoon sugar

but have never used gf flour before.

You'll probably need 1cup of milk to the 1cup of gf flour.
Gf flours tend to need more liquid, but otherwise it'll be fine :)

update: hey turned out ok, if not quite as fluffy as usual. but very tasty and wheat free guest could tuck in as well.
needed quite a lot more liquid than usual.

now I just need to use up the rest of the pack. can I use it for white sauces?

To answer your last q, yes, you can use it for sauces. Combine it with corn flour too, to make enormous yorkies - yum.

If you use 1/5-1/4 tsp xantham gum it will put the fluffiness back.

I make gf pancakes every Saturday and they are nice and fluffy. It's an American recipe though, so uses cup measurements.

1 1/4 cups dove farm gf self raising flour
1tbsp sugar
1 1/4 cups buttermilk
1 egg
1 tsp vanilla
2 tbsp vegetable oil, plus more for frying.

Mix flour and sugar in large bowl. In a separate medium bowl, mix buttermilk, egg, vanilla, and oil. Add milk mixture to flour and whisk until blended.
I use the 1/4 cup to measure out the batter on to the pan on medium heat.

In general though, I find the doves farm flours swap into recipes fairly easily.

Yorkie recipe:

2oz g/f plain flour
2 oz cornflour
3 eggs
7 fl oz milk
Fat

Preheat oven to 230C/ gas 8.

Put fat of choice (I use olive oil) in muffin tins (12) and place in oven till v hot.

I bung all all ingredients into a jug (except the fat) and whizz them with my stick blender, I'm not sure how technically correct this is, but it works very well!

Pour batter into hot muffin pans and cook for 20 - 25 mins.
