I'm Back again- Fish tips please

ok I have taken out kipper and mackerel fillets for dinner[yuk!!!]

What can I do withj them.

Shopping day is tomorrow so bare minimum today

I have

Beansprouts
water chestnuts
bamboo shoots
cous cous
eggs

no fresh veg left today but do have some frozen brocolli, young corn and cauliflower.

Don't even have rice or would have done a rissotto type thing

any ideas gratefully welcomed

Just bumping this along for you, never figured out the art of cooking fish myself

Put them in a baking tray, pour olive oil & lemon juice over the top & then crush some garlic over the top. Sprinkle some herbs over & season with pepper. Bake in the oven until cooked - probably about 20 mins.
Serve on cous cous with stir fried beansprouts & water chestnuts.
