Lettuce omlette - hmmmmm?

Has anyone tried one? I found a recipe in an Italian cookbook and am wondering if its worth the egg!

I think I had a cabbage one in Russia many moons ago (absolutly lovely).

I love griddled lettuce so would definitely try it!

So I made it last night with a bowl of leftover mixed lettuce leaves that would have gone in the bin (would be a squeeze to fit in the fridge and would be limp and horrible today).

It was surprisingly nice! A bit like cabbage. A great recipe for leftover salad (I suspect it will be fine with any odds of tomato or sweetcorn left in there).
