Can you whip coconut cream?

I've got a recipe for a lime and coconut ice-cream, it's half cream, which you whip before folding through equal amount of coconut cream. But guests for whom I was going to make it have just discovered dd is allergice to dairy - d you reckon it would work if I just made it with all coconut cream? Would that work?

I'm not sure - would be interested to know too.

But I must mention that bessant and Drury do a lovely dairy free lemon ice cream (and mango one too). You can buy from waitrose and tesco too I think. Smile

You can whip coconut cream but it needs to be very cold so keep the tin in the fridge first.
