I fry onion and garlic with spices, cumin, coriander, chili garama masala, whatever. Add lentils, tin of chopped toms and water gradually and let it bubble and then reduce down. If you like it sweet and or creamy add mango chutney and towards the end creme fraiche. Add more spices too.

hi Jambuttie - how was the lentil curry? I thought I might try it in my new slow cooker.

yes and what sort of lentils do you put in?

janeite · 03/10/2006 20:31

A few sliced hard boiled eggs are lovely as a garnish for lentil curry.

The curry was lovely I also put some dry cashews in at the very end to bulk it out a bit and it was lush.

I used red lentils in it - the ones for soup
