Ideas for meals to feed 7 adults...

...when one can't have dairy or red meat.

I'm away soon at a youth hostel and am responsible for cooking one evening meal and one lunch. Both meals will be in the hostel, so they don't need to be portable and can be hot or cold.

No other dietary requirements.

We'll be buying ingredients on the way, so I don't really want to cook things that need half a bottle or pack of something.

Any inspiring suggestions?

you could do a spag bol or a chilli with turkey mince & rice. Or a chicken tagine with couscous. Chicken curry.

For lunch, could you do baked potatoes, with a selection of toppings (cheese, beans, cottage cheese, tuna & sweetcorn with mayo optional if your non-dairy person can't have that). If you can do your lunch after your evening meal, you can also use up any leftover spag bol/chilli.

Alternatively for lunch bread, cheese, various cold meats, salad. Or soup.

(although my suggestions aren't very "inspiring"! You might want to check out what others are making too as I guess others might be thinking
chillis/curries/tagines !)

Chicken in red wine, or just roast chicken with salad.
Aunergines cooked in a tomato sauce.

Add smoked fish and a mix of 50/50 water and orange juice to rice, bring tot he boil and simmer for 15 mins.

Salmon en papillote with vegetable stock, herbs, spices, etc.

Serve with rice.

Not near the sea, but some really good ideas here. I especially like the idea of jacket potatoes for lunch. And I hadn't even thought of couscous.
