we need to know how you boil a carcass to make stock and ultimately a tried and tested soup recipe.

we want to make our weekly shop go further and as this is always suggested we need to know how.

In a large pot, put the chicken carcass, an uncut onion, a carrot and celery stalk; cover with 2 quarts of cold water. Simmer the daylights out of it or for about an hour and a half. Strain the whole thing; discard carcass (with a clear conscience). Refrigerate till ready to use for soup. Take the goopy grease off the top once it hardens in the fridge. Now you have fabulous, homemade chicken broth that is virtually fat free!
