Vegetables for a roast

Putting my chicken in at 2.30 to eat at 5.

What time should I put the par boiled potatoes in the oven to roast? And should I put them in oil?

Same question for parsnips..

I tend to par-boil potatoes but not parsnips. The par-boiled potatoes should be floury ones like maris piper or king edwards. Give them a chance to dry out a bit and rough them up by bashing them around in the pan. This will help them go crispy.

You'll want to put the pan with olive oil or goose fat in it to warm in the oven. You don't need them swimming in oil, just enough to coat the potatoes and parsnips. Then in the oven for about 40min, turning two or three times. Don't forget to allow the chicken some resting time when it comes out.
