i have a vague recollection that i can roast/microwave them and eat with creme fraiche, but what else?

- make wedges, and roast in oven - make mash - roast and eat with butter + chilli

Roast it! Mash it! Make chips! Treat it like an ordinary potato. It's a wonderful topping for shepherd's pie etc. Loads and loads can be done with it. It is gorgeous!

Sweet potato pie

boil 1/3rd sweet potato 2/3rd potato
Fried onion
Loads of cheese

Mashed all together
Put cheese on top

Grill to melt the cheese

Serve with baked beans

Peel, cut into chunky chip-type bits, put on baking sheet, drizzle with olive oil, sprinkle with herbs, bake in oven for about 20-25 minutes at 200C.

Would do a sort of Pacific stew with it.
Poach chicken,greens and pimpkin in coconut milk and chilli.Eat with brown rice.

Anything you can do with a normal potato. Stab it and stick it in the microwave for 10 minutes (or the oven for an hour, if you have patience). Open, add lots of butter, eat. Yum.

And if you do mash it, quickly toast some sesame seeds (in a pan, not the toaster ) and sprinkle them over... the two go together really well.

If you mash it, put some half fat creme fraiche and minced garlic with it instead of butter or oil or whatever - it is fantastic with roast chicken and doesn't need any other seasoning.
