Need help with how many guests to order for buffet catering

I am having a party with approx 100 adults.

We have to use the venues caterers and they have sent me a menu with 3 buffet options, each option with slightly more food and I assume its prices as per head. They said to let them know if we require changes.

1st option is sandwiches, vol au vents, chicken drumsticks, sausage rolls
2nd option is as above but additionally new potatoes and another vol au vents (they must like them)
3rd option is sandwiches, chicken satay, quiche, spring rolls, vol au vents, chicken drumsticks, salmon en croute, pasta salad, mixed salad, fruit platter.

I have absolutely no idea how many to ask for, is it one per head, so 100 of a certain option? Do you think I can mix them e.g half option 1 half option 3?

Any help would be very welcome. Thanks.

What kind of party? Ask how much food you get per head. I would be tempted to cater for 80% of guests. It go for option 3.
