I've frozen fish pie that contains chopped boiled eggs and not had any problems when defrosted and reheated.

I've done it with a curry with eggs and the egg does change in consistency. Makes the white slightly tougher. Edible but not wonderful.

We do it, always seems to taste better after being frozen!!

I freeze it. No noticeable problems.
