Recipe for light fruit cake?

I've been asked to make a 10" square 90th birthday cake to be covered in marzipan and fondant. They've asked for a light fruit cake but I've only tried making one a couple of times and wasn't impressed with how it turned out ( one was really dry, other was greyish and unappetising! )

Has anyone got a recipe for light fruit cake they love?
Am considering saying I'm only comfortable doing choc, vanilla or rich fruit cake but don't want to disappoint.

I made this one recently. We really liked it but I haven't iced it so not sure how it would taste. Don't be put off by the vinegar in the title - you can't you taste it!

I made this for work a while ago and everyone loved it. It's like a fruit cake but not as dense as a regular wedding type fruit cake.
The recipe for the almond toping is on the side of the website.
