Big/light/fluffy sponge cake

Does anyone have a recipe for a sponge cake that rises really well, is light and fluffy. Need to make one for DP to take to work tomorrow. Usually make small cakes as I can never never make a large cake that is big and light and fluffy. Can anyone help.

although why a big light fluffy sponge? I think you couldn't go wrong with Mars' lemon drizzle cake .. always loved and great with coffee / tea breaks

lemon drizzle here .. it is quite impressive and difficult to get wrong

Thanks for that. someone who I used to work with made large coffee/ chocolate / lemon/ coconut cake that were really light and fluffy and DP loved them. wanted to make one like it. thanks for links.

victoria sponges are v light if you follow the instructions exactly

For chocolate, leave out the lemons, add 2 tblsps coca, a couple of extra tblsps of milk (to get the consistency right) throw in a 200g bar of chocolate chopped into chunks (or choc chips). Make drizzle syrum with water instead of lemon juice and add some cocoa. Or just ice with melted chocolate.

Mars Lady's Lemon Drizzle cake
4 eggs
9oz (250g) soft marg
9oz (250g)caster sugar
12oz (350g)s/r flour
3 level tsps baking powder
6 tbsp milk
grated rind of 2 lemons.
Mix all ingredients.
Put in lined tin (I use 2 loaf tins but something 2 loaf tin sized is fine).
Bake (about 30-40mins)

Icing: Lemon juice (from 2 lemons)
12oz (350g) icing sugar sieved
Warm lemon juice, mix icing sugar in. Prick warm cake and drizzle! There you go!
