Simple chicken casserole recipe for bereaved friend?

I tend to do quite rich sauces, but want to run up a couple of casseroles for my friend to pop in the freezer. I don't expect they will feel like eating anything too rich, so would appreciate any appetising but simple/light recipes which might fit the bill. (I'd prefer to use chicken breast rather than thighs for them.) Thank you

I do this one:
6-8 chicken legs or thighs; you could use breast if you want
200g bacon lardons
200g shallots
4 carrots
500g mushrooms
herbs: dille, thyme, marjoram, parsley

Chuck it all in a casserole with lid. Cover in chicken stock and put it in the oven for 2hrs at 170 degrees. Serve with baby potatoes. It's delicious and not heavy. You can leave the bacon out if you want too, although it does add a bit of taste.
