I've got a friend coming for supper on Monday evening, we have an action packed weekend so I need to get the ingredients in tomorrow.
Only problem is I don't have a clue what to cook, friend has no allergies or intolerances so no issue there
It needs to be quite cheap.
I usually cook a boleganise or a curry but I'm a bit fed up of eating them
Any suggestions or links?
TIA

What about a really good pasta dish? The pasta is so cheap you can spend a bit more on the sauce then.

This is divine, and you can get a dressed crab from Tesco for about a fiver, which would feed probably 3 of you as it is likely to be a slightly smaller amount of crab meat than the recipe calls for. Hopefully you might have the other stuff in stock! I make it with cheapy penne pasta when linguine is too expensive, or spaghetti. Serve with a bit of salad if you want some greens.

Or a Spanish omelette? Eggs, potato, pepper etc. are reasonably cheap and it's quite filling. Could have it with salad or veggies.

Pasta bake with either chicken or tuna.
Cooked pasta, add some browned chicken or a tin of tuna, pour over jar of sauce, stir and top with grated cheese. You can put bacon in with the chicken, and a tin of sweetcorn with either. Serve with salad or veg.

Tagliatelle with philadelphia and chives and smoked salmon. You can put peas in too or have them on the side or a salad.

Lemon & thyme chicken & rice pot - seal chicken (drumsticks & thighs) in a casserole pot & remove. Brown onions & pancetta lardons together, add rice & stir fry for a minute. Add chicken stock to cover rice, throw in a handful of broad beans, a few sprigs of thyme, and place chicken pieces on top. Put the lid on and put in the oven (pre-heated to 180C) for 45mins/1hr.
It's delicious, limited washing up and very difficult to get wrong!

Turkey mince enchiladas. Stir fry turkey mince with chopped red onion and peppers until cooked, stir in some pesto (red or green) and optionally some cheese. Pack into tortillas and roll up then put in baking tray. Top with tomato based sauce or grated cheese and bake until the tortillas start to brown.
