Vanilla cupcakes

I love vanilla cupcakes and would like to make some but have no idea of a recipe. Any ideas?

I generally make the Primrose Bakery's vanilla cupcakes and they are delicious. However, they are more of a dense and rich cake. If you want a very light fluffy cake, then this Victoria Sponge recipe works well for cupcakes.

I've tried loads of recipes and a good old victoria sponge recipe works the best IMO. Weigh your eggs (2 large ones will give you roughly 12 cupcakes), then weigh butter, sugar and SR flour to the same weight. You can beat it all in together, if you do this method, add half a tsp of baking powder. Put them in cake cases - no more than 1/2 - 2/3 full - and bake - I bake at 150 for about 25 mins. That gives flat cupcakes, if you want them domed, bake at a higher temp for a shorter time.
