Coconut Oil

I have recently invested in coconut oil to try and help my terrible skin and metabolism. I am on day 2 of the vile stuff (I love coconut, just not in weird solidified lumps of spunk-like oil)

Good old Google reveals that I should be eating around 2tbs per day. So I'm aiming for one in the morning, and one in the evening. This morning I had it in a smoothie. This afternoon in some yoghurt with granola.

Both tasted pretty nice. BUT. The coconut oil is solid at room temp and very solid and grainy in drinks/fridge like temps. I also tried it in tea, but it just sat on top like a spoonful of oil would. (And it burnt me).

I could cook with it, but tonight i didnt fancy coconutty chilli.

Please can you share with me your best ways of getting it in you (DH takes tablespoons neat, but that makes me gag)

You could try creamed coconut instead of oil and make a fat bomb!

50g creamed coconut, 50g very ripe banana, vanilla powder to taste, pinch of sea salt, pinch of cocoa powder, mix! Add some desiccated coconut if needed to make a texture firm enough for rolling into a ball and finally roll in coconut and chill. You won't have any difficulty eating these!

If you don't like banana try dates, or just add honey and play around with the proportions. Or have a look on Pinterest.
