salmon and radish....?

I have a slab of salmon to use up, going to do dinner for DH and I tonight, kids tomorrow and might be some more left after that. I also have a glut of radishes.

Not sure why, but it feels like the two could go together - I've heard of salmon/smoked salmon and horseradish sauce, but what can I do with salmon and radish? Grateful for any ideas. Thanks

could you do the radish like pickled ginger? Japanese style.

Do a vietnamese style pickle with carrots and radish. slice both thinly, and make a pickle of sugar, water, lemon juice (or rice vinegar if you prefer), crushed garlic or garlic powder. The resulting pickle can be eaten within half an hour or over a couple of days. I love the pink colour that happens after a wee while! serve with pan fried salmon, and rice.

Mmmm. Love the idea of pickling them, thanks both. I have so many that I will be trying that in a couple of days!

In the end, I sliced and pan fried with seasoning and they mixed beautifully with the salmon and mange tous.
