Cutting-out biscuits

I've been give some cutters in cute shapes.

This was obviously a lovely thought, but now I have to make something that gets cut out.

Any tips for an actually-tasting-of-something cutting-out biscuit recipe?

Shortbread.
50g sugar
100g butter
150g plain flour
Rub the butter and flour between your fingers to form breadcrumbs
Add the sugar
Roll out and cut out shapes

If I add sugar to something breadcrumb-textured how does it then become rolling-out textured?
