What veg can go in a chicken casserole?

I have just purchased some chicken thighs and have dug out the slow cooker. The veg I have are celery, courgettes, baby corn, sweet potato, normal potato, onion and carrots. I also have frozen peas, Sweetcorn and casserole veg.

I'm not great with the slow cooker so if someone could invent me a recipe I would appreciate it!

I have veg stock, chicken stock and an array of herbs and spices.

I only put root vegetables in. This is what I do.

I brown the chicken in a frying pan. If I have time I brown the veg too. Usually turnip, sweet potato and carrot. I put stock in the slow cooker with either brown of green lentils then chuck the other stuff on the top.

I usually put it on high and feed the dc about 4.30 then turn it to low and dh and I eat at about 8.30.

Bugger I've bunged the chicken in without browning it. Will it be ok or should I rescue it, brown it and shove it back in?

I went with sweet pot, normal pot, celery, carrots, onions and mushrooms.
