Choritzo in macaroni & cauliflower cheese? I cannot decide if it would work or just be weird. Have you tried it, if so was it yum or yuk?

Well we always put bacon in with ours and it's yum! Not sure about choritzo though.

I also lay sliced boiled eggs on the top before the sauce goes on though, so I am weird.

Chorizo is nice with potatoes in a tomato sauce too.

I love chorizo but I wouldn't add it to something that's cheesy. I think I would add it to more tomato based things or paella or to a chicken casserole.

Craving chorizo now.

I think chorizo will be too oily. It needs something acidic with it to cut through the fattiness.

The main danger with chorizo in that dish is that your cheese/cauliflower sauce is likely to turn pink :) If you use it very sparingly as a topping with some breadcrumbs it might add flavour without discolouration.
