Freezing questions - need some advice

Hi everyone,my dd is going into year 1 this week, and i want to avoid the chaos we had every morning last year. I want to make sandwiches on a Sunday night for the entire week. Will these sandwich combinations be alright to freeze.
Cheese and tomato
Tuna
Cheese and cucumber
Hummus
Also if i take them out in the morning will they defrost by lunchtime. They will be put in a lunchbag with an ice pack for freshness.

Another question is if i make fairycakes or shortbread biscuits are these okay to freeze too.

Very boring questions, but greatful for any answers. Thanks

Tomatoes do not freeze particularly well, they go mushy when defrosted - think cucumber may be the same.

My tub of Sainsbury's hummous says 'Do not freeze'.

Cheese is ok, not sure about tuna. Fairycakes and biscuits would be ok I think.

Don't reckon you'd need to pack an ice-pack, I think they'd still be partly frozen if you did.

I don't freeze, but my DD only has packed lunch 1 day a week - good luck with your time-saving ideas tho!
