Why do my muffins taste like air?

They taste of nothing I baked simple cheese muffins for dd who is 8 months. They were quite sponging inside? Any ideas or suggestions.

What cheese are you using? Really strong mature cheddar works best.

Add some mustard powder, really improves the flavour but isn't hot in any way
