What do I do with it?

put it in saldad
cook it and freeze it, then when u come accrosss a recipe for it its in oyur freezer
soinach is lovely with salmon in pastry with a white sauce.
or with pasta , blue cheese (which melts with the heat) and chicken shreeddded thru it

Favourire pasta dish is spinach wilted in lots of garlic & olive oil, and add crispy bacon too.
Chickpea & spinach curry is good and a good dressing for spinach salad is olive oil, balsamic & spoon of honey (plus s & P)

Some great ideas here. I like it in pasta too, kind of like wads suggests but add some nutmeg as it wilts and add cream / creme fraiche once it has wilted down. Parmesan at the end, lots of pepper.

oh, and I'm sure you know, but if you've never used sinach before it's really quite astounding how much it wilts down and reduces, so make sure whatever dish you're doing that your leaves are piled high. It looks like LOADS but will soon disappear. I'm sorry, i'm sure you knew that.

wilted with only the water it's been washed in (takes 30 secs - 1 minute) and finished with a good slug of olive oil and some lemon juice. yum.
