Rice Pudding......like Granny used to make?!

Evening all, anyone got a decent recipie for a good old fashioned rice pudding? The tinned ambrosia stuff is ok(ish), but remember my Gran making a fantastic rice pudding.... we used to fight over who got the "skin"!

I usually make it according to the recipe on the pack of rice (haven't got any here to check at the mo) but add a few drops of vanilla essence/extract as well.

We fight over the skin here too

yes just use packet - i heat milk first to speed up process. flavour with vanilla /cinnamon/nutmeg or fruit compote.

My nan lives with me and this is how she makes it:

Pudding rice (small fat grains her words!) washed a few times first. 1 & 1/2 cup ful of rice in a saucepan and cover it with water, cook until water has gone and rice is stodgy. Add sugar to taste. Add a large tin of evaporated milk, fill the tin 1 & 1/2 times with water and add that to the rice, stir it all up, put in an ovenproof dish, sprinkle with nutmeg and knobs of butter, bake it for about 30-45 mins on about 190, she doesn't know what gas mark that would be and tbh neither do I, how awful!! Hope this helps and I can vouch for it it is loverly!!!! We are haveing tomorrow!!

3.5 oz pudding rice
2oz brown sugar
1 pt milk
cinnamon/nutmeg

Can add
dessicated coconut
chopped dried apricots
raisins
glace cherries
or replace cinnamonor nutmeg with ginger

In the oven medium heat for about an hour or until the top has a brownish skin

enjoy with ice cream or evap

If you follow the instructions on the side of the packet of pudding rice, yo'll be OK. Just add some nutmeg and/or vanilla essence as well.

Be aware that you'll probably think you haven't put enough rice in as it will be swamped with milk.

Don't do as I did and try to get clever and add more rice. The last time I did this I ended up with a 'rice brick' instead of a 'rice pudding.'
