Slow cooker meals to impress

Hello

We've recently had a baby and are finding that we haven't got the same time as before to make really tasty meals. We do batch cook and freeze at weekends which has really helped by I think e we are just also a bit bored of the same old things.

We have a slow cooker which I really like but DP is incredibly suspicious of it for some unknown reason. He is also the world's spooniest fucker and completely interferes with my cooking. Drives me bonkers.

Anyway, I'd love to broaden our repertoire and also get some use out of the slow cooker. Do you have any good recipes you could share? Don't have to use the slow cooker but could also be one pot or easy to prepare.

Very easy to prepare slow cooker recipe I did for friends on Saturday:

Pack of stewing steak (or mixed game)
tin of tomatoes
couple of carrots
couple of onions
mixed herbs
stock cube

Chuck meat in slow cooker (browning is optional), followed by chopped veg, toms, herbs and stock cube. Add a bit of water (or wine) so it doesn't dry out. Cook on low for 8 hours. Serve with spuds and greens (and the rest of that wine).

Slow cooker also makes the best stock.

Pulled pork! Put a pork shoulder in with a can of full sugar coke and a bottle of BBQ sauce. Cook on low hot 8-10 hours. Pull apart with 2 forks

Beef in balsamic vinegar.Joint of beef like brisket/silverside can be used.Add a half cup of balsamic vinegar,tablespoon of soy sauce,one of Worcestershire sauce and a tablespoon of honey.Chop 4 garlic cloves and then add half teaspoon of hot pepper flakes plus a cup of beef stock.Then cook for 4 hours on high or 6-7 hours on low.It smells really strong at first but is absolutely delicious hot or cold in sandwiches.

Spinach and chickpea curry- I made yesterday when trying to use up store-cupboard /freezer ingredients. It went down well with veggie friends who came by for dinner:
Chopped onion
Ginger, chilli (I used those frozen cube ones)
Cumin
Ground coriander
Frozen spinach
Chick peas
Tinned tomatoes

You could also throw in pretty much any old veg lying around. Potatoes or aubergine would be nice in it.

Just chuck everything in, cook on high for 1 hour an low for about 5 hrs.

Serve with pita Bread and yogurt.

This pork and apricot recipe is amazing although I've never done it in the slow cooker, you might just need to keep an eye on it.

Google Chinese beef hotpot on bbc good food- add less liquid for the slow cooker. It is yum yum yum!
