Freezing veg, esp aubergine

I've got various veg in the fridge which won't keep while I'm on holiday, so was thinking I'd freeze it.... but really don't have time to mess around blanching. If they're going to be used soon after I get back from hols, would it be ok to just cut up, bag and freeze? Aubergines, pepper, courgettes, maybe some cauli...

Peppers and courgettes and aubergines should be fine, though I'd chop and bag to use for roasted veg/ cassseroles/ stir fries rather than anything else as they may lose a bit of texture but should still taste fine.

Think you'll have to blanch the cauliflower before freezing or if you have any cheese/ milk needing to be used and have time to knock up a quick cauliflower cheese then you can freeze this whole
