Lemon cake recipe

It's DPs birthday tomorrow and DS wants to make him a cake.

DP loves lemon drizzle cake so thought we could make him a lemon cake as a drizzle cake doesn't look like much.

Does anyone have a good recipe?

Also lemon curd in the middle or lemon butter cream

This drizzle cake went down well, got from an american friend, went down well at work;

Lemon Crunch Cake

4oz soft salted butter
6oz self raising flour
1 level teaspoon of baking powder
6oz caster sugar
2 eggs
4 table spoons of milk
Zest of 1 lemon

(For topping)
Juice of 1 lemon
3 table spoons of granulated sugar

Cream together the butter & sugar in a medium bowl, then beat in the eggs until the mixture is light and fluffy. Stir in the flour and baking powder & mix well. Add the milk and the zest of one lemon & continue mixing.

Grease & line a 7” square tin, bake at gas mark 4, 180c / fan oven 160c in the centre of the oven for 45-50 minutes, or until golden brown and a skewer inserted into the middle of the cake comes out clean.

Topping
Mix some granulated sugar with the lemon juice. When the cake is done prick all over the top with a fork & pour the lemon sugar over the top, allow to set before removing from the tin. When set remove from the tin and cut into squares.
