Lactose free cup cakes HELP!

Have been asked to make cakes for an important visitor to ds school tomorrow, and have now been told that they need to be lactose free. I have a cupboard full of basic cooking ingredients but no way of getting to a shop tonight, does anyone have a fool proof recipe they could suggest.

Do you have margarine (dairy free)? Nigella's always work for me

125g butter/marg
125g self raising flour
125g sugar
2 eggs
1 tsp baking powder
1 tsp vanilla essence

Bung everything in a blender and whizz. You can add (soya) milk to loosen mix a little if you want or to make mix go further.

Spoon into cupcake cases. Bake 12 mins approx in 180 deg (fan) oven. Slightly higher if non fan.

I always use oil instead of butter. Just google 'oil cake recipes'.

Mayo is great for lactose free stuff...obv check your labels, I have made my own though before which is not at all hard.

This recipe is very similar to the one I do

It makes 18-24 med/small muffiny affairs, or a dozen giant ones.

If you want vanilla ones, swap the cocoa powder for 2tbs ground almonds and 2 tbs flour....slightly heavier mix but still good.

Other than that oil is fine as mentioned....have a google.
