I've got a couple of friends coming for lunch and have decided to do caesar salad, does anyone have a good dressing recipe, daren't ask chef dh, he will roll his eyes and then give me a very vague recipe.

yes! here's a fab one. It does use raw egg though.

put 2 eggs, 2 peeled garlic cloves, juice 1 lemon, 4 tsp dijon mustard and 2 tsp balsamic vinegar in a food processor and blend until smooth. With motor running gradually add 300ml sunflower oil. Season to taste.

That's Good Housekeeping's recipe, and I always also add a small tin of anchovies and 2 good handfuls of grated parmesan to it as well as otherwise I find it's missing something, but you could make it first and try it and then decide! Would recommend the parmesan though even if you leave ut the anchovies as it gives it a much nicer gloopy coating texture.

Let me know if you use it and what you think!!
