Quick, help! Tempeh question....

I've defrosted a block of tempeh but it's blackish in one corner. Does this mean it's off?

Please... I need to add it now or leave it out altogether.

I've got no idea if it's off or not but I'd dearly love to know what tempeh is...

mmm thought that it was a typo .... thought you menat to say Temper !!
