A nice mushroom soup please?

Hello mindermummy. maybe i can help you with this.I have a great recipe for Mushroom soup. Here it is,
Depending on how many it is for i will give you the recipe for 4 people.
2 Punits of Button Mushrooms washed
1 large onion roughly chopped
1 clove of garlic
2 Tbl spoons sunflower oil
1 Gls White wine
1/2 pint veg stock
1 Ltr Cream
Cornflour
Salt & Pepper

First heat the oil in a pan. then add the onions and sweat for about 2 mins.(sweating the onions means cooking without colouring the onions. The onions will start to go transparant). Add the clove of garlic and continue cooking for a further minute. Add the mushrooms. (note that the mushrooms are better left whole when cooking as it will discolour the soup. Meaning the soup stays lighter).After 2-3 minutes of cooking add the wine and let if reduce- let the wine bubble away on the heat for a couple of minutes. add the veg stock and let the soup cook away for a further 15-20 minutes. After that add the cream and let the soup come to the boil.When it has come to the boil take off the heat and blend with a stick blender.After blending you might need to thicken with a little cornflour ( important note when using cornflour you have to boil whatever you have added it to as to let the cornflour cook-out- to work. You will also be able to see wheahter you need to add more aswell). Season to taste.

a punnet is the tray that the mushrooms normally are packed in (usually blue or white) just the same as the punnets that strawberries come in when you purchase them. If buying them loose you will need approx 1kg of mushrooms.
The cream that you will need is normal cooking cream. You can get these from any local supermarket. They come in cartons ranging from 250ml.If you can't find them nomal whipping cream or double cream for that exta ricness. But double cream is more expensive. The advantage of using double is that you won't need the cornflour as when you heat double cream or boil it ,it will naturally thicken.

Just to say thanks, as the soup turned out lovely...everyone commented on how lovely it was and wanted the recipy! I didnt add all the litre of cream, as it sounded so much!! A real heart attack job!! but added most of it and it was yummy. Thanks.
