leftover chicken - any suggestions?

So after having a roast chicken yesterday im pondering what to do with the leftovers.

Anyone have any recipes for using up the rest? I usually make up a chicken and mushroom pie but feeling adventurous today and wouldn't mind nicking some recipes

I did a chicken and pesto quiche the other day, ready made pastry/or case. Then 2 or 3 eggs, half a tub of philly, a heaped desert spoon of pesto and a splash of milk, baked for 35 mins (don't forget the chicken) YUM

Our favourites are Chicken & Egg Fried Rice made with shredded cooked chicken, brown rice and some fine-diced veggies such as peppers and courgette.... and Chicken Chorizo Risotto with chopped chicken, a tiny amount of finely chopped Chorizo for flavour, peas and stirred through with some Parmesan at the end

Coronation chicken? To go in baked potatoes?

The chicken fried rice above sounds nice too :)

Noodle soup with the stock + the chicken?

Although I'll be doing coronation chicken myself...

Thanks for the recipes, they all sound lovely and certainly a lot more exciting than my chicken and mushroom pie Chicken rice sounds delicious, be rude not to try it.

Thai green curry and risotto are my post-roast chicken favourites, plus stock in the slow cooker of course.
