How do you cook yours?

I've got a lovely big bit from the butchers I made him cut the nipples off and had it scored really well.

Tips please!

Slowly with apples and prunes.

Bumping as I'm interested in this too.

I cook it for ages on a low heat, then turn the oven up hot for 20 mins to crisp up the crackling at the end. Delicious.

Do any of you pour boiling water over the skin to open up the scores then dry & rub salt to get amazing crackling?

I don't, just sprinkle salt over

I make a pork cassoulet with pork belly

Chinese pork and eggs with pak choi and rice.
Simmering away as I type.
I put some ribs in for the flavour from the bones.

Jamie Oliver has a nice fennel flavoured one. It's very good!

It's lovely, I put finely shredded spring onions on top.

Okey dokey, use rosemary instead with oregano, thyme and garlic. Actually this one is better. I must have been having a brain fart

This twice cooked method is really good. It also works with other flavourings such as dry cider, star anise and fennel seeds. I usually braise the meat the day before, let it cool in the fridge then fry when needed.

i would stick it in the pressure cooker though, for the first cooking.
