Can we have a chat about what food/s you most frequently throw out from your fridge and how they could actually be used up?

I'll start:

Creme fraiche - I buy this to go in a chicken paprika casserole thing I do, but then can't think of another way to use the other half pot within a week.

Sweetcorn - the dc like tuna sweetcorn (ick!!) in wraps and sandwiches but again I only need half a tin. So the other half festers in the back of the fridge until it grows blue mould someone realises and chucks it.

Coleslaw - never eat the whole tub

Olives - ditto

Grapes - similar

Apples - quite often the apples end up going wrinkly

Potatoes - omg, I have thrown away so many potatoes and now we have full blown potato plants growing out of our compost bin

Thanks ComeHeather, I usually buy a ball for pizza on a weekend & it gets forgotten about & remembered about for weeks. At least it'll still be useable if it's in the freezer!

Not a problem - anything not chicken goes into the food processor to make a hen mash for the Buff Sussex girls and any chicken (not that much of that is wasted!) goes to the dogs. Then there is the compost heap so no food goes to 'waste' in our house. Grin

I always have to make extra mash so my son can have potato cakes the following day. Leftover risotto is great rolled into balls (you can stuff with a bit of cheese) and deep fried. We finish up with bits of mouldy cheese, houmous (great to hear you can freeze it) and those green peppers others have mentioned. Is there any recipe they're good for? And why do carrots go off so quickly?

I have 5 packs of white asparagus tips that need using if anyone could help please?

most things in my house go either into the soup maker for a mixed veggie soup or into an omelette for lunch.

A green pepper recipe:-

Chicken jalfrezi - chop chicken, onion and green peppers fry off. Add tin of tomatoes, appropriate curry paste (pataks) and cook until cooked.

optional extras to sex it up include tin of coconut cream, tomato purée, fresh tomatoes , fresh chillies, cardamom, mustard seeds and fresh coriander.

Chilli con carne
Add mince, finely chopped onion and green pepper. Fry off. Add tin toms and some kidney beans and a spice mix.

Tomato purée thickens it, Worcester sauce adds flavour.

What about cooking the asparagus, then popping some parma ham and cheese sauce over and pop in the oven for aprox 5-10mins.
Thats my fave.

Asparagus & other green summery veg (eg peas/broad beans/spring onions/leeks/courgette/french beans/broccoli) in a risotto or in a creamy sauce (creme fraiche/sour cream/cream or just white sauce) layered with lasagne sheets, cheese top and bake, or in a creamy sauce over tagliatelle/spaghetti with bacon/parma ham/trout/salmon or in a frittata would be my suggestions titsalina

We've started having omelette on a regular basis. Quick, healthy and I chuck at least four different types of veg in, so it uses it up before they go slimy. My issue is soft fruits, I like nectarines, but you have to eat one a day to use them up, then I get bored and they go squishy

And what do you do with leftover wine?

Asparagus: cook (fry, bake, steam, whatever) and use for dipping in boiled eggs. Even better if you wrap them in bacon first.

Has anyone mentioned radishes yet? If you have these leftover, you can slice them in half and sautée them in butter with a little salt. If you crowd the pan, some of the red leaches out of the skin, into the butter, and soaks into the flesh, tinting the whole radish princess-pink.

Oldish apple/pear/ banana fruit- slice and fry in butter, sprinkle with brown sugar, fold into pancakes.

Oldish grapes, berries etc go in smoothies.

Anything dairy in cheese sauce.

But half tins of beans, tomatoes etc are gruesome and I never know what to do with them.

It's bananas in this house. People eat loads and loads and loads for ages, and then go on strike and they go black. I do make banana bread sometimes, but even that needs to be made before they're liquid.

Only wrap the asparagus in bacon if you're baking/roasting it, though. I can't take responsibility for the palatability of steamed bacon.

I used to have the potato problem. Just me and DS who doesn't really eat them. But we always needed some for roasts or to top cottage pie if we were having his mates over.
Discovered ready peeled Maris Pipers in Asda. Enough for a good roast dinner for 6 I'd say. They seem to work much better as roasts then peeling yourself and boiling. They go in the fridge as smaller bag and they are £1.10 which only buys you 4 small jackets normally.
