Perfect medium roast beef, how?

We got a piece of matured beef yesterday, its 1.3 kg and very lean, no top fat on it at all. I would like to roast it with the lovely pink bit in the middle, no idea how though.

Meat thermometer and believe it, even when if says "rare" about 10 mins after it's gone in the oven. Ours has never failed us.

I saw a little online vid for perfect beef, the fella sealed the outside first in a hot pan then put in to roast, was supposed to keep it moist inside.

I found a chart on t'internet and went by it. Still a little overdone for our taste, I think my oven is hotter than it should be. Was ok though.
