Exciting salads

I have decided my partner and I need to be more healthy and I'm going to do salads for our evening meal (as opposed to the absolute crap we usually eat). Last night I did a Jamie Oliver recipe I remembered seeing on his 15 min meals thing. Involves chicken in Indian spices, naan bread as croutons, mango chutney in the dressing. Went down a treat with partner who is not the healthiest person / salad fan.
Does anyone have any exciting salad suggestions? I'm thinking mainly of what I can add to a salad/put on top of a salad/ have as a side with a salad to make it really interesting (and not seem like a salad to other half).

Last night I made little meatballs with lamb, garlic and spring onions, whizzed up a tin of chickpeas for hummous, made a sliced beetroot salad with oil and fruit vinegar and shredded some lettuce with chopped dill and a dollop of plain yoghurt and served it all with hot pitta for stuffing. Very fine indeed and leftovers make a great lunchbox.

Advocado and walnut salad. On leaves, salt and pepper, drizzle walnut oil over it. Done. You could also add goats cheese.

Pear, walnut and Stilton salad. As above, but without the Advocado.

Brazilian sweet corn, pea and pepper salad. Equal parts defrosted frozen peas and sweet corn (2 handfuls of each), a chopped up red pepper from a jar. Crush a clove of garlic, mix this with olive oil and salt and pepper and stir through your pea mix.

Put some streaky bacon on a baking tray with an edge, iyswim, and cook until crispy. Remove the bacon to a board to cool a bit. Turn some cut-up pita breads in the bacon fat on the tray and pop them in the oven for 5 mins or so. Break up the bacon, toss into your salad with the toasty pita 'croutons'. Some blue cheese works great in the salad as well if you're not tiresome about proper cheese like my DH

Use a peeler to make raw courgette ribbons, toast some pine nuts, add halved cherry tomatoes and shaved Parmesan, balsamic, lemon juice and olive oil. Fantastic with grilled meat or fish.

Cooked green beans served cold with walnuts, blue cheese and olive oil/lemon juice and black pepper is gorgeous.

Cannellini beans, with cherry tomatoes, chopped parsley, cucumber, avocado, lemon zest, capers, olives and a lemon and olive oil dressing is fab with tinned or fresh seared tuna.

Get a pack of merchant gourmet healthy grains and mix with feta, chopped parsley and mint, pomegranate seeds, chopped spring onion and cherry tomatoes, dress with lemon and olive oil.
