Eating an unhealthy sausage is not going to kill you. Eating lots of them is not going to be good for you, but a little bit of what you fancy won't do you any harm.

"There are no bad foods, only bad diets". Good quality sausages have a very high meat content, relatively low fat, and minimum 'padding' (rusk etc) Look for sausages that are 90%+ meat for a good experience. Sainsbury 'Ultimate' Outdoor Bred Pork Sausages for example are 97% meat.

No I think once a week is fine as long as you're having a varied healthy diet. As PP said, buy good quality with high meat content. Better to have quality sausages as part of a cook from scratch meal than ready meals or takeaways (although those won't kill you either if the majority of your diet is good!).

The standard recommendation for the amount of any meat to eat daily in a healthy balanced diet is about 3 - 4oz or a piece approximately the size of a deck of cards or the palm of your hand. Two decent-sized sausages will fit that criteria.
