fresh pineapple

...is bloomin lovely!
But its massive and given that its just myself, DP and a very small person I know there is only so much we can eat raw.
Does anyone have some good recipes we could try for some other ways to use a pineapple.

Pineapple, chicken and peppers on skewer, marinated in pineapple juice, soy sauce and honey. Lovely!

I whizz it up along with bananas and soya milk, with a stick blender,
to make smoothies

Grilled or fried pineapple with gammon steak.
Chopped up into a stir fry with chicken or pork.
Pineapple upside down cake.
Pineapple Romanoff for those "date nights" you keep meaning to do.
Fry in butter and brown sugar and spoon over ice cream.

Pineapple freezes! Take the skin off and dice it up, then freeze. My mother got this tip from someone a year or so ago and didn't believe it, but it works perfectly well. Great for her as she now lives on her own and cannot eat a whole pineapple before it starts fizzing. This is the answer for next time.
