DS is 2.2 and would eat his body weight in cakes etc if I let him

he's small and skinny for his age so we do let him have snacks and stuff

He goes to my mum and mil one day each a week and I put him a lunch box up.

I usually make pasta bolognaise / stews and soups etc, freeze in pots and just pop a couple of those in for ease.

I've started making and freezing cup cakes and putting a couple in which he loves and impresses mil no end for some reason and i got extra brownie points for making his dinner and pud but I'm looking for other bits and pieces I can make and freeze?

I'm not a very good cook but I do try!

I had some success with homemade pizza last week so might make them to freeze.

Flapjack is easy to make and can be made with different ingredients for variety, also freezes well.

BobPatandIgglePiggle · 26/04/2014 07:48

Thanks - I thought about flapjacks but I've no idea what to make them in.

I know this sounds crap but mum hates cooking so I never learnt at home and I literally have no clue. I RAVED about my homemade pizza at work (and thought I was really clever) till my colleague said he made pizza every Thursday and poo pood my recipe.

He's a prick though.

I make sausages rolls and freeze them raw, cook in 25mins from frozen.

That's a good idea, thanks. I made pastry the other week that I was quite impressed with so I could use that :-)

I do scones (plain, fruit or apple and cinnamon), cupcakes, mini quiche and banana muffins.

guineapig1 · 26/04/2014 22:21

Homemade pizza is lovely. Quiche is also both tasty and easy and can be frozen as are cheese scones. Easy snacky things (though they don't freeze) are chocolate crispy cakes and breadsticks. Both are easy to make and great for lunch boxes

I make savoury muffins like these which freeze well

I make biscuit dough and freeze that. Gingeebread and nigella's cheese stars are fabourites.

Cheese scones. I butter them and then freeze them individually wrapped, they go straight from the freezer into lunchboxes, thawed by lunchtime.

Gerty1002 · 27/04/2014 07:01

Ooh you freeze them with the butter on butterflies? I'd have never thought of doing that!

runawaysimba · 27/04/2014 07:29

I do cheeseymite scrolls too - bread dough rolled out then spread with marmite and grated cheese, rolled up and baked at 200c for 15-20 minutes. Also same but with pizza sauce instead of marmite. Yummy!

Chocolate chip cookies freeze well once cooked.
Banana muffins.
Make a loaf cake, slice, and freeze the slices.

butterfliesinmytummy · 27/04/2014 14:10

Yes, so easy, perfect for when the dcs complain about "sandwiches again"! I used to wait for them to defrost before buttering them and packing them up, now they're good to go straight away.

OuterFromOutersville · 27/04/2014 14:12

I freeze banana pancakes (no added refined sugar).
