You know the pizza with spinach and egg........

..I think its called a Fiorentina, well if you're making your own how do you do the egg?
Is it as simple as cracking the egg onto the pizza and then cooking it as usual? Or does that make the pizza soggy?
Last thing I want is any trace of raw egg white

i would probabbly leave the egg out, tbh. I think it might make the pizza soggy. the eggs are often underdone on a pizza, in my exp.

If the oven is really hot just crack an egg on at the end and it dhould only take a few minutes to cook I love egg on pizza

I would cook it on the pizza. If you put it on right at the last minute and then put it straight into a really hot oven it should cook before it makes it soggy.

I've had variable ones in the past but some have been excellent -I just fancied trying to recreate it at home as we have some fresh spinach to use up.

Anyone?

If you do it properly it doesn't make the pizza soggy. The trick is to put plenty of spinach on first, then make hollows in the spinach to put the eggs into. Cooking for 15 minutes should cook the egg fully, and if you've got plenty of topping then it shouldn't over-cook the pizza.

You could try Ricotta on it instead? It's a really similar taste and foolproof.

Hooray -it worked!! (and I'm no Delia, believe me!).
I put the oven on really hot, broke the eggs onto the top of the pizza and toppings and popped it in for 10 mins -perfect
